Fettucini Alfredo with Sausage and Roasted Peppers

Made this tonight. Totally made it up on the spot. Rumor has it was pretty good.

Measurements are ... guesses.

5 italian sausages
1/4 cup shiitake mushrooms, coarsely chopped
1 roasted red pepper chopped
sundried tomatoes to taste ( a couple pieces ) coarsely chopped
1 minced garlic clove ( or more. garlic loves company)
Red pepper flakes - optional.

Brown sausage. Reduce heat, add everything else and cover.

While the sausage is browning, start the alfredo.

butter - eh. 4 TBSP
2 shallots
up to 1/4 c flour
1 c parmesean cheese, shredded
1 pint heavy cream

Saute onions in butter until translucent. Slowly add flour to thicken. at this point, you're going to be stirring the sauce fairly constantly. Slowly stir in the cream, then the cheese. If the cheese is clumping, you can add a little water ( or milk or chicken broth ). Salt and pepper to taste.

Serve over fettucine. Or maybe bowtie.
